Your New Favorite Oven Fries

We LOVE fries at our house.
In fact, we probably eat them about 3-4 times a week.
Thankfully, we bake our fries in olive oil, avoiding the extra fat and calories of a traditional fry. Don't get me wrong, there's not a lot that's tastier than a deep fried french fry, but there's no way we'd be able to eat those as frequently as we eat my version!


This recipe makes 2-3 servings

You will need:
two medium-sized potatoes (I usually use russet)
Jane's crazy salt
1/4 cup olive oil
cold water

There are two tricks to making these fries super crispy and flavorful. The first is to soak your cut potatoes for about 20 minutes then dry them completely before you toss them with oil. Soaking the potatoes will draw out the starch, ensuring that your fries are extra crispy when you serve them!

This is my other secret weapon:
It is a fantastic addition to french fries- I toss my fries with a good sprinkling after taking them out of the oven, and they are ready to eat!
If you're not a fan or can't find this, you can just use a good sprinkling of Kosher salt. You can play around with other flavor profiles by adding some cumin, fresh rosemary or even a little Old Bay! Another yummy variation is to use olive oil you've infused with garlic and/or herbs, YUM!

All you do for this fast and easy french fry recipe is slice up your potatoes (I usually cut them in half then slice lengthwise to form planks. Next, I cut them into thin strips). Sometimes I like to make wedges by quartering the potato then making four slices through each quarter). 

Soak your potatoes for about 15-20 minutes in cold water then pat them completely dry.
Toss them with oil then spread them in a single layer on a sheet pan (I use a pan with a raised edge to prevent oil spilling over).
We like to drizzle the oil over the potatoes then mix them up with our hands, making sure each potato is coated.
Bake at 400-415 for about 25 minutes flipping at about the 20 minute mark (when they start to look done). Resist the urge to mess with them while they're in the oven otherwise you'll have a mushy mess on your hands!). 
Remove from the oven, toss with Jane's Mixed-Up Salt and serve immediately.
