{Everything-but-the} Kitchen Sink Cookies!

This cookie recipe is a show-stopper.
Seriously, they are so yummy.
The cookies are chewy, rich and delicious with crispy edges and a decadent marshmallow chocolate drizzle.

I always plan to eat one and end up eating three or four.
It's fine because they have oatmeal in them, right?

You will need:
2 cups flour
1 cup sugar
1 cup brown sugar
2 sticks of softened butter
2 eggs (I always use jumbo)
1 tsp. baking powder
1/2 tsp. baking soda
2 tsp. vanilla
1/4 tsp. kosher salt
2 cups quick oats
1 1/4 cup Rice Krispies
1 1/2 cups chocolate chips

For the drizzle:
1/2 cup semi-sweet chocolate chips
1/2 cup mini-marshmallows
2-4 tbsp. heavy cream

Recipe adapted from Paula Marchesi for Food Network Magazine

First, find yourself a cute little baker to unwrap your butter.
Check out the dog in the background...everyone in my house likes to bake!
Add the softened butter to the mixer then cream it with the sugar.
I was so excited to have baking help from my big kid- it's a rarity these days.
Crack your eggs in a separate bowl (this way you don't have to toss all of your batter if the egg shells get into the mixing bowl).

Add your vanilla...
Then add your baking soda, baking powder and salt.
Mix on medium-low to combine.
Add your oats...
And your Rice Krispies...
Mix on low to combine, adding flour a little at a time.
Add the chocolate chips (and make sure to give some to your helper).
Scrape down the bowl and mix again.
Drop spoonfuls onto parchment or a greased baking sheet.
Bake at 350 for about ten minutes until the cookies flatten and edges begin to darken.
Cool completely.
Accidentally eat one or three in the name of quality control.
While the cookies are cooling, melt your chocolate chips and marshmallows over medium-low heat, stirring frequently.
Add the cream and stir until smooth.
Remove from heat.
Once the drizzle cools for a few minutes, pour it into a Ziploc baggie.
Snip the tip and drizzle over each cookie.
The best part about using a baggie is that you just throw it away when you're done.
Gets you to the cookie-eating part faster that way, ha!
The drizzle takes about two hours to set, so leave them out for at least that long before stacking them on a cake plate or transferring them to a container.
Happy Weekend, All!
